Mushroom cookies

    onion, finely chopped
  • 250

    fresh mushrooms, sliced
  • oil
  • 1
    packet mushroom soup powder
  • 250
    ml
    water
  • 250
    ml
    oats
  • 2
    ml
    Marmite
  • 1
    potato, peeled and boiled until tender
  • 3
    extra-;large eggs, whisked
  • salt and pepper to taste
 

Method

 
Sauté; the onion and mushrooms in a little oil until tender. Remove from the pan and cool. Blend the mushroom soup powder with the water. Stir well until smooth and lump-free. Add the oats and Marmite. Mash the potato and blend with the oats mixture. Add the eggs and mushroom mixture and season to taste with salt and pepper. Drop spoonfuls of the mixture in shallow oil and fry until cooked and brown on both sides. Serve with a salad.
