Mushroom bobotie

    each button, portabellini and brown mushrooms, finely chopped
  • 1
    onion, finely chopped
  • 2
    cloves garlic, crushed
  • 1
    chillies, chopped
  • 50
    g
    peanuts,chopped
  • 2
    sprigs coriander, chopped
  • 2
    pumpkin leaves,finely chopped
  • 125
    ml
    fresh cream
  • 65
    ml
    beef stock
  • 3
    eggs
  • salt and pepper to taste
 

Method

 
Melt butter and sauté onions,garlic and chillies lightly.
Add peanuts, coriander and pumpkin leaves.
Pour in cream and beef stock, simmer for 15 minutes.
Pour mixture into a shallow baking tray.
Whisk eggs and pour over mixture.
Cook in oven at 180 °C until eggs are set.
To serve, cut into squares.
