Mushroom and sausage casserole

    oil

    large onion, chopped
  • 2
    cloves garlic, crushed
  • 1
    large red pepper, chopped
  • 300

    thin pork sausages, sliced diagonally
  • 400

    chickpeas, drained
  • 400
    g
    fresh button mushrooms, sliced
  • 125
    ml
    dry white wine
  • 410

    chopped tomatoes
  • 15
    ml
    chopped fresh parsley
  • salt and pepper
 

Method

 
1. Heat oil and sauté onion, garlic and red pepper until soft. 2. Add sausages and cook for 5 minutes, or until browned. 3. Add chickpeas and mushrooms and cook over medium heat for 5 minutes. 4. Add wine, tomatoes and parsley and simmer for 20 minutes or until sauce has thickened slightly. Season to taste. 5. Serve on mashed potatoes or pasta.
