Mushroom and herb pasta salad

Mix together vinegar, lemon juice and mustard. Add oil, slowly whisking until well combined. Add lemon rind, herbs, garlic and mushroom slices. Allow to marinate for at least one hour. Cook pasta in plenty of salted boiling water until al dente. Drain and rinse under cold running water. Allow pasta to cool completely. Add marinated mushrooms and sauce to the pasta. Add grated Parmesan and freshly grated black pepper and salt to taste. Toss to combine well. Dish up on individual serving dishes and garnish with shavings of Parmesan.
