Mushroom and cheese pizza topping

    fresh mushrooms (a mixture of fresh brown, fresh black, fresh button and fresh oyster fresh mushroom
  • 3
    large onions, sliced
  • 50
    g
    butter
  • herb oil
  • 50
    g
    goat's milk cheese, grated
  • 50
    g
    Parmesan cheese, grated
  • 50
    g
    mozzarella cheese, sliced
 

Method

 
1. Slice mushrooms and cook in oil for 5 minutes, set aside. 2. Cook onions slowly in the butter over a low heat, without browning. Onions should turn a caramel colour. Cool. 3. Brush deep-pan pizza dough with herb oil, top with caramelised onions, mushrooms and three cheeses. Bake in a preheated oven at 200 ºC for 30 to 35 minutes.
