Mushroom and basil butter tagliatelle

  • 250
    g
    fresh button mushrooms, thinly sliced
  • 50
    g
    butter
  • 30
    ml
    olive oil
  • 30
    ml
    snipped fresh chives
  • 60
    ml
    fresh, chopped basil
  • freshly ground black pepper
  • 450
    g
    garlic and herb tagliatelle (or plain tagliatelle)
  • freshly grated Parmesan for sprinkling
 

Method

 
1. In a frying pan, sauté the sliced mushrooms in the butter and olive oil. As an alternative, use a drained 285 g jar of sliced mushrooms in oil and simply heat with the butter. 2. Just before serving, stir the chives, basil and black pepper into the mushroom mixture. 3. Toss the sauce into the freshly cooked tagliatelle. Serve with a mixed salad and freshly grated Parmesan cheese to sprinkle over the top.
