Ingredients (11)

1.00 bread
DRESSING
2.00 spring onion — chopped
100.00 ml vinegar — white wine
200.00 ml fresh chillies — 573
2.00 garlic — cloves, chopped
5.00 ml salt
10.00 ml sugar
50.00 ml mustard — sweet, wholegrain
10.00 ml Dijon mustard
FILLING
mozzarella cheese
salt and freshly ground black pepper

Method:

Cut a ‘lid’ off bread and scoop out most of the soft bread inside.
To make the dressing, shake all the ingredients together in a screw-top jar.
To assemble, layer the filling ingredients inside scooped-out bread, sprinkling each layer with dressing, and season lightly.
Replace lid and wrap bread tightly in foil, then in 2 layers of cling film. Refrigerate overnight.
When ready to serve, unwrap and cut into wedges.
