Ingredients (13)

240.00 g flour — cake
50.00 ml sugar
15.00 ml Baking powder
salt — pinch
2.00 eggs
375.00 ml milk
50.00 g butter — or hard margarine
100.00 g muesli — toasted
butter — for frying
to serve — to serve
yoghurt — or whipped cream
fruit — fresh

Method:

Combine the flour, sugar, baking powder and salt in a bowl. Make a well in the centre.
Beat together the eggs and milk, and add to the dry ingredients. Mix with a whisk to a smooth batter – don’t overmix.
Melt the butter or margarine in a small saucepan or jug in the microwave on medium. It shouldn’t be too hot. Mix into the batter, and set aside for at least 5 minutes.
Heat a little butter in a frying pan or griddle pan until moderately hot. Drop in 30-50 ml spoonfuls of the batter, placing well apart to allow for spreading. Place a spoonful of muesli in the centre of each crumpet. When golden brown and bubbles appear on the surface and start to break, turn over with a spatula. Cook until golden brown on the other side.
Place the crumpets onto a wire rack and cover with a cloth to prevent them from drying out while you prepare the next batches.
To serve, stack 2 or 3 crumpets on each plate. Stack with fruit and yoghurt or cream, and drizzle with honey or syrup.
