  • ICING
  • 125
    g
    butter
  • 250
    ml
    icing sugar
  • 10
    ml
    vanilla essence
  • 20
    ml
    strong black Nescafé coffee
 

Method

1 hour
 
Preheat the oven to 180 ºC. Spray a 24 cm cake tin with non-stick spray. Mix the muesli and boiling water and leave to cool. Cream the butter and castor and brown sugars until light and creamy. Beat in the eggs and vanilla essence. Sift together the dry ingredients. Add the soaked muesli to the egg mixture, alternating with the sifted dry ingredients and milk. Stir and turn into the cake tin, cover with aluminium foil and bake for 1 hour. Turn out onto a wire rack to cool. To make the icing, beat together the butter and icing sugar until light and creamy. Add the vanilla essence and coffee, beating well. Decorate the cake with the icing. Makes a medium cake.
