Moules marinière (Mussels in white wine sauce)

    ml
    butter
  • 1
    onion, chopped
  • 500
    ml
    dry white wine
  • 1
    kg
    whole mussels, cleaned
  • 5
    ml
    lemon juice
  • 50
    ml
    freshly chopped parsley
 

Method

8-10 minutes
 
Heat butter in a large saucepan and sauté onion until tender. Add wine and bring to the boil. Add mussels, cover and simmer for three minutes until mussels have opened. Discard any that don't open. Stir in lemon juice and sprinkle in parsley. Season to taste and serve with crusty bread.
