Method

 
Mix 300 g cake flour with yeast. Heat milk, sugar, butter and salt until lukewarm, stirring until butter has melted. Add to flour and yeast mixture, and mix at low speed for 30 seconds, then beat at high speed for 3 minutes. Mix in enough remaining flour to make a smooth, pliable dough. Knead thoroughly until dough is smooth and satin-textured. Cover with a tea towel and allow to rise in a draught-free place until doubled in bulk. Punch dough down, then knead once again. Flour a wooden board very lightly. Break off small pieces of dough and roll into little balls (about the size of a golf ball). Arrange balls, close together, in a well-greased, shallow, 28-30 cm diameter baking pan. Brush with egg and milk mixture and bake in centre of oven at 180 ºC for 45 to 60 minutes.
