    ground cumin
  • 1
    grated rind of lemon
  • 5
    ml
    chilli powder
  • 3
    ml
    ground coriander
  • 1
    garlic clove
  • 2
    ml
    coarse salt
  • 2
    ml
    coarsely ground black pepper
 

Method

 

Crush ground cumin, the finely grated rind of a lemon, chilli powder, ground coriander, chopped garlic clove, coarse salt, coarsely ground black pepper in a mortar. Rub into fresh fish fillets, chicken or chops and leave for 5-10 minutes before cooking.
