Moroccan grilled pineapple and couscous salad

Ingredients (15)

2.00 pineapple
45.00 ml sugar
sunflower oil — for frying
1.00 onion — diced
500.00 ml pineapple — juice
5.00 ml cinnamon — ground
5.00 ml salt
500.00 g couscous
45.00 ml butter
45.00 ml fresh parsley — chopped
200.00 g feta cheese — cubed
100.00 g black olives
2.00 pink grapefruit — cut into segments
30.00 g rocket
lime — grilled, to serve

Method:

Preheat grill.
Scoop out balls from pineapple flesh with a melon baller or cut into slices. Place pineapple pieces in an ovenproof dish. Sprinkle with sugar. Grill for 5 minutes, turning occasionally. Set aside.
Heat oil in a frying pan and sauté onion until soft and golden. Add pineapple juice, cinnamon and salt and bring to boil. Add couscous. Stir in butter with a fork to fluff grains. Add parsley, feta cheese, olives, grapefruit and pineapple balls. Divide rocket between plates, pile couscous on top and serve with grilled limes.
