Moroccan cucumber salad

    large cucumber
  • 1
    small yellow pepper, sliced
  • 1
    small red pepper, sliced
  • 1
    small onion, finely sliced
  • 30
    ml
    chopped parsley
  • 1
    clove garlic, crushed
  • 1
    small red chilli, finely sliced
  • 15
    ml
    oil
  • 3
    ml
    lemon juice
  • 5
    ml
    salt
  • freshly ground black pepper
  • 2
    tomatoes, chilled
 

Method

 
Peel cucumber, trim ends, slice lengthways into four. Cut out the seeds and chop. Put in bowl with all remaining ingredients, except tomatoes. Toss well, then cover and chill for two hours. just before serving, quarter tomatoes, remove cores and seeds, chop and add to salad. Toss well and serve immediately. Serves 6.
