Moroccan couscous with chicken and apricots

Ingredients

    olive oil
  • 45
    ml
    Moroccan spice rub
  • 4
    chicken breast fillets, thinly sliced
  • 6
    spring onions, sliced
  • 100
    g
    dried apricots, chopped
  • 200
    g
    baby tomatoes, halved
  • 1
    tin chickpeas, drained
  • 250
    g
    couscous cooked according to packet instructions
 

Method

15 minutes
 
Mix the oil, Moroccan spice and chicken.
Heat a large frying pan and fry the chicken in batches until cooked through. Remove from pan.
Sauté the onions in the pan and add the apricots, tomatoes and chickpeas, and cook for another minute.
Return the chicken to the pan and toss with the couscous.
Serve with lots of freshly chopped coriander.


VARIATION
Replace the chicken with 400 g thinly sliced lamb fillet.
