Moroccan baked fish with salsa salad

    white fish fillets (sustainable)
  • 15
    ml
    ground coriander
  • 15
    ml
    ground cumin
  • 7.50
    ml
    paprika
  • 0.50
    tsp
    cayenne pepper
  • 1
    tsp
    salt
  • 2
    Tbs
    olive oil
  • 2
    Tbs
    lemon juice
  • 1
    large cucumber
  • 4
    firm,ripe tomatoes
  • 1
    red onion
  • 60
    ml
    coriander leaves
  • 2
    preserved lemon quarters (remove pith and only use peel)
 

Method

15-20 mins
 

Wipe fish with a damp cloth.

Mix spices, salt, olive oil and lemon juice together and rub into fish fillets.

Place on a baking tray and pop into a 200 degree C preheated oven for 15 to 20 minutes (depending on thickness) or until done.

Prepare salad and place on a platter, top with spiced baked fish and serve with warm, crusty bread.
