Preheat the oven to 220°C. Grease the
hollows of a muffin tin with butter, marga-rine or nonstick spray.
Mix the bran and boiling water in a large mixing bowl.
Add the butter or margarine and leave the mixture to cool slightly.
Add the sugar, egg and 200ml of the buttermilk and mix.
Mix the bicarbonate of soda with the remaining buttermilk and add to the bran mixture.
Combine the cake flour, wholewheat flour and salt.
Add the raisins or other optional ingredient of your choice.
Add this mixture to the bran mixture and mix until just blended ? the batter will be fairly slack.
Fill the muffin tin hollows two thirds of
the way with the batter.
Bake for 20 minutes on the middle rack of the oven.
Turn out carefully on a wire rack to cool.
