Moist pineapple cake

    g
    margarine or butter
  • 15
    ml
    liquid sweetener
  • 2
    large eggs
  • 200
    g
    cake flour
  • 5
    ml
    baking powder
  • 2
    ml
    bicarbonate of soda
  • 2
    ml
    salt
  • 200
    ml
    skim milk
  • 4
    slices canned pineapple
  • 125
    ml
    pineapple juice
 

Method

25 minutes
 
Beat margarine or butter and liquid sweetener until light.
Add eggs, one at a time, beating well after each addition.
Sift together dry ingredients. Add dry ingredients to the creamed mixture, alternating with the milk. Fold pineapple pieces into the mixture.
Spoon into a greased 20cm ring tin and bake in a preheated oven for 25 minutes or until a skewer inserted comes out clean.
Remove from the tin and pour over the pineapple juice. Set aside to cool. Serve sliced as a teatime treat or dessert.
