Moist chocolate and date cake

    stoned dates, finely chopped

    cake flour

    cocoa
  • 5
    ml
    bicarbonate of soda
  • pinch salt
  • 250

    yellow sugar
  • 250
    ml
    mayonnaise
  • 5
    ml
    vanilla essence
 

Method

45-55 minutes
 
Preheat the oven to 190 ºC (375 ºF). Grease a 22 x 22 x 5 cm cake tin with non-stick spray or grease well. Pour the boiling water over the dates and cool. Sift the cake flour, cocoa, bicarbonate of soda and salt together. Add the sugar and mix. Make a hollow in the flour mixture and add the mayonnaise, vanilla essence and cooled date mixture. Stir until just blended. Turn into the prepared cake tin and bake for 45 to 55 minutes in the centre of the oven until done and firm on top. Cool before turning out carefully. Cut into squares and serve with cream. Makes 16 large or 32 small squares.
