STEAK .
750.00 g beef mince
1.00 onion — finely chopped
3.00 thick slices brown bread — soaked in water and squuezed out
30.00 g soup powder — white onion
15.00 ml chutney
3.00 eggs — extra large, whisked
sea salt and freshly ground black pepper
oil — for frying
SAUCE
soup powder — onion
250.00 ml water
100.00 ml cream
30.00 ml sherry
4.00 fresh mushrooms, sliced — fried

Method:

Preheat the oven to 160ºC (325ºF). Spray a 11 x 29 x 7 cm loaf tin with non-stick food spray or grease well.
Mix the mince, onion, bread, onion soup powder, chutney and eggs in a large mixing bowl. Season with salt and black pepper to taste. Turn the mixture into the prepared loaf tin. Cover with aluminium foil and bake for 1 hour. Remove the aluminium foil, and bake for another 30 minutes until done.
Cool slightly in the loaf tin before turning out. Slice the meatloaf into 1 cm-thick slices. Fry the slices in oil until golden brown.
Prepare the sauce by mixing the remaining thick white onion soup powder with 250 ml (1 cup) water. Heat until thick, stirring continuously. Add the cream if desired, and bring to a gentle boil. Season with sherry and stir in the fried mushrooms if using.
Serve the meat slices with the sauce and potato chips.
Serves 6.
