    sugar

    butter

    cake flour
  • 45
    ml
    cornflour
  • 90
    ml
    coffee creamer
  • 45
    ml
    custard powder
  • 2
    ml
    salt
  • 3
    ml
    baking powder
  • 10
    ml
    vanilla essence
  • 1
    x 24 cm baked shortcrust pie shell
  • ground cinnamon
 

Method

 
Bring the water, sugar and butter to the boi.
Meanwhile combine the dry ingredients and mix with a little water to form a paste.
Add a little of the hot liquid mixture to the flour paste.
Mix and return everything to the saucepan.
Bring to the boil again and simmer, stirring continuously until the mixture thickens and is cooked through.
Remove from the heat, add the vanilla essence and pour the filling into the pie shell.
Dust with a little cinnamon and leave to cool.
Chill until needed and serve at room temperature.
