Mock chicken drumsticks

Step 1 Remove the tips of the wings at the joints. Step 2 Holding the narrow part of the wing, carefully cut around the bone with a knife. Cut the meat loose from the bone, scrape and push the meat downwards towards the wide part of the wing. Step 3 Using your fingertips, pull the skin and meat over the end of the bone so that each wing resembles a miniature drumstick. Mix the remaining ingredients, except the oil, pour over the chicken wings and leave to marinate in the fridge over night. Brush an ovenproof dish with the oil, place the chicken wings, along with the marinade, in the dish and bake for about 30-45 minutes till cooked and brown. Baste continuously with the marinade. Serve hot. Makes about 25 mock drumsticks.
