Mixed seed and nut tart

    pecans, cashews or hazelnuts
  • 45
    ml
    sunflower seeds
  • 45
    ml
    sesame seeds
  • 16
    savoury crackers
  • 3
    egg whites
  • 250
    ml
    sugar
  • 2
    ml
    baking powder
  • 5
    ml
    vanilla essence
 

Method

 
Lightly toast nuts and seeds in a pan on top of stove, then place in a food processor bowl with crackers. Chop coarsely. Beat egg whites until foamy and gradually beat in sugar. Fold in baking powder and vanilla essence, then fold in nut and seed mixture. Pour mixture into a 20 cm diameter tart pan and bake at 190 ºC for 20 to 40 minutes, or until a skewer inserted in centre comes out clean. Serve tart warm with whipped cream.
