Mixed seafood with salsa

Ingredients

    g
    fresh fish fillets
  • 400
    g
    whole prawns
  • 400
    g
    fresh mussels
  • 2
    fresh green chillies
  • 50
    ml
    lemon juice
  • 50
    ml
    freshly chopped coriander
  • 6
    fresh tomatoes
  • 1
    red onion
  • 4
    cloves garlic
 

Method

15 minutes
 
Place fish pieces in a saucepan. Cover with water and bring to the boil. Simmer for three to five minutes until fish is cooked through. Remove from the pan and set aside to cool.
Add prawns to the water and simmer for two to three minutes until prawns turn opaque. Remove from the pan and set aside to cool.
Add a little more water to the pan and bring to the boil. Add mussels and boil until the shells open. Remove from the pot, drain and cool.
Arrange all the cooled seafood on a platter.

SALSA TOPPING
Mix together all remaining ingredients. Season well with salt. Spoon over the seafood and garnish with lemon wedges and fresh coriander sprigs. Chill until ready to serve.
