    French bread
  • 3
    cloves garlic
  • oil
  • half a head of lettuce
  • 5
    whole baby sweet corn
  • 3
    courgettes, sliced
  • 250

    sweetmilk cheese, diced
  • 10
    cherry tomatoes, halved (reserve a few whole)
  • Dressing
  • 50
    ml
    tarragon vinegar
  • 50
    ml
    lemon vinegar or lemon juice
  • 50
    ml
    olive oil
  • 50
    ml
    oil
  • 1
    clove garlic
  • 5
    ml
    mustard powder
  • 2
    ml
    salt
  • pinch freshly ground black pepper
 

Method

 
Cut the bread into 1 cm slices.
Fry the bread and garlic in the oil until the bread is pale brown. Drain on paper towelling.
Arrange the lettuce leaves on a salad platter and top with the sweet corn and slices of bread.
Combine the remaining salad ingredients and spoon on top. Finish off with the whole tomatoes.
Blend all the ingredients for the dressing and shake well. Pour over the salad just before serving or serve separately.
