Mixed onion and feta cheese tortilla

  • butter and sunflower oil for frying
  • 2
    leeks, thinly sliced
  • 1
    medium mild onion, chopped
  • 1
    bunch spring onions, sliced
  • milled pepper
  • 30
    chopped parsley

    jumbo eggs, beaten

    milk or water
  • 150
    feta cheese, crumbled


Heat butter and oil in a large frying pan. Add leeks and onion, and sauté for 3 minutes. Add spring onions and stir-fry for a minute or two. Season with pepper and add parsley. (Make sure there is enough fat in the pan, otherwise the eggs will stick.) Beat eggs and milk or water together. Pour over onion mixture and stir to mix thoroughly. Stir gently every minute or two until tortilla begins to set. When egg is almost cooked through, add feta cheese and more black pepper. Place under a hot grill to finish cooking and brown top slightly.
