Mixed mushroom quiche

    cumin poppadums
  • 6
    portabellini mushrooms, sliced
  • 6
    button mushrooms, sliced
  • 6
    oyster mushrooms, sliced
  • 2
    large eggs
  • 300
  • salt and pepper
  • 180
    yellow Cheddar cheese


10 minutes
Preheat oven to 180 °C.
Plunge the poppadums in boiling water to make them pliable and use to line six aluminium foil tins.
Place a few slices of each kind of mushroom in the bottom of each shell so the oyster mushrooms are on top.
Whisk together the eggs and yoghurt, season with salt and pepper and pour into the tartlet shells.
Sprinkle with cheese and bake for 15 to 20 minutes or until done.
