Mixed mushroom pasta

  • 500
    g
    tagliatelle
  • 30
    ml
    olive oil
  • 1
    ml
    dried chilli flakes
  • 3
    garlic cloves
  • 250
    g
    fresh black mushrooms
  • 250
    g
    fresh oyster mushrooms
  • 30
    ml
    sun-dried peppadews (optional)
  • 30
    ml
    chopped parsley
  • salt and milled pepper
 

Method

 
Cook pasta until al dente.
Meanwhile, sauté chilli and garlic in oil for three minutes. Take care not to burn the garlic as it becomes bitter.
Add mushrooms and cook for five minutes so that they become limp but don't disintegrate.
Add peppadews and parsley and toss into hot pasta. Season to taste.
Serve with freshly grated Parmesan cheese, crusty Italian bread and lots of chilled white wine.
