Ingredients (7)

500.00 g green beans
7.00 ml fresh chillies — 573
2.00 garlic — cloves, thinly sliced
400.00 g butter beans — tinned, drained and rinsed
15.00 ml lemon — peel and juice
30.00 ml onion — crispy bits
0.00 salt and freshly ground black pepper

Method:

Cook beans in rapidly boiling salted water for five minutes, till just cooked but still crunchy and bright green.
Drain and cover to keep warm.
Peel the lemon with a potato peeler and then use a sharp knife to slice the peel into thin strips.
Heat olive oil in a large pan and sauté garlic over a low heat for a minute.
Add butterbeans, lemon peel and juice, salt, pepper and cooked beans to pan.
Cook to heat through, about five minutes, shaking the pan to combine flavours.
Transfer to a warm bowl and sprinkle the crispy onion bits over the beans.
