Mixed citrus peel cookies

    butter
  • 500
    g
    icing sugar
  • 3
    eggs
  • 220
    g
    coconut
  • 250
    g
    mixed citrus peel
  • 400
    g
    Marie biscuits
  • 5
    ml
    vanilla essence
  • coconut for decoration
 

Method

 
Place the butter into a large glass dish and microwave for three minutes on 70 per cent power until melted. Add the icing sugar and stir well. Beat eggs well and add to the mixture. Microwave for two minutes on 100 per cent power. Beat well, using an electric beater. Microwave again for two minutes on 100 per cent power. Finally, beat well with the electric mixer. Add the coconut. Ensure the peel is finely chopped and add to the mixture. Break the Marie biscuits into small pieces and add. Add the vanilla essence and mix well. Place onto a greased baking sheet and sprinkle with a little coconut. Allow to cool and cut into squares. Makes 56 squares.
