Mixed berry water ice

Ingredients

  • 500
    g
    mixed berries, puréed and strained
  • 300
    ml
    sugar syrup
  • 30
    ml
    lemon juice
 

Method

 
1. Put the fruit syrup, lemon juice and 125 ml cold water in a saucepan. Cover and simmer for five minutes, then cool. 2. Liquidise and strain or rub through a sieve. Chill for 30 minutes. 3. Add lemon juice. Churn in an ice cream maker, or pour into a chilled container and cover, placing it in the coldest part of the freezer. 4. After an hour to 90 minutes, a firm ring will form around the edge. Loosen with a fork and beat with an electric hand beater until it is slushy. Cover and repeat this at least twice. Freeze until firm. It will keep for up to three weeks.
