Mississippi mud pie

Method

40 minutes
 
Pastry Place flour, walnuts and sugar in a large bowl. Rub in butter with your fingertips. Add egg yolk and mix. Mix in 30ml cold water a little at a time to form a firm dough. Cover and refrigerate for 30 minutes.
Roll pastry out on a lightly floured surface and line a 26cm spring-form pie tin.
Put a baking tray in the oven to heat up.
Filling Melt butter in a saucepan. Remove from heat and stir in chocolate, cocoa powder and coffee until chocolate has melted.
Beat together sugar and eggs until thick and creamy. Beat in milk and syrup. Stir into the chocolate mixture.
Pour into pastry shell. Place pie on the hot baking tray and bake for 35-40 minutes, or until it sets and a crust forms.
When cool, top with grated chocolate or chocolate curls. Serve slices topped with fresh berries and whipped cream or ice cream.
