Miss Emily's hard-boiled egg casserole

    freshly ground black pepper

    milk
  • 125

    cream
  • 225
    g
    mature Cheddar cheese, grated
  • 9
    hard-boiled eggs, sliced
  • 25
    ml
    freshly chopped parsley
  • 50
    ml
    dried breadcrumbs
  • 10
    g
    margarine
 

Method

Fry bacon, then remove from the pan and set aside. Melt 25 ml margarine in the saucepan and stir in the flour, herbs and seasoning. Stir in the milk and cream gradually and continue to stir until thick. Add the cheese and mix well. Grease an ovenproof baking dish, then cover the base with half the egg slices, bacon, parsley and sauce. Repeat the layers with the remaining ingredients. Melt the 10 ml margarine, combine with breadcrumbs and sprinkle on top of the casserole. Bake uncovered, in a preheated oven for 25 minutes until golden. Allow to stand at room temperature for 5 minutes before serving. Serves: 8 Preparation time: 20 minutes Cooking time: 25 minutes Oven temperature: 180 ºC
