Minute steaks with garlic chip potatoes

    large potatoes, peeled
  • 8
    large cloves garlic
  • 2
    sprigs fresh rosemary
  • coarse sea salt and milled black pepper
  • 30
    ml
    olive oil
 

Method

 
GARLIC CHIP POTATOES: Halve potatoes, then cut each half into 3-4 long fingers. Place in an oiled ovenproof dish. Arrange garlic cloves around potatoes, sprinkle with rosemary, salt, pepper and oil. Cover with foil and bake at 180 ºC for about 1 1/4 hours. After 45 minutes, remove foil and continue cooking until potatoes turn golden brown. MINUTE STEAKS: Heat olive oil in a pan until piping hot. Add steaks, one at a time. Turn over after a few seconds and sprinkle with seasoning. Sear for a minute or two on each side. Remove and serve immediately on a heated plate with garlic chip potatoes.
