Minty mushroom kebabs

  • 450
    g
    small closed cup mushrooms
  • MARINADE
  • 150
    g
    natural Greek style yoghurt
  • 30
    ml
    chopped fresh mint
  • 1
    large clove garlic, finely chopped
  • 15
    ml
    paprika pepper
  • 15
    ml
    lemon juice
 

Method

 
Place mushrooms in a large bowl. Mix marinade ingredients together. Add mushrooms and stir until well coated. Cover and leave to marinate for at least 4 hours, stirring occasionally. Thread onto 8 soaked satay sticks. Cook on a barbecue for about 5 minutes.
