Ingredients (6)

50.00 g Sheridans gelatine
650.00 g sugar
2.00 ml Cream of tartar
0.00 Food colouring — red, green, yellow
0.00 peppermint essence
0.00 sugar — coating

Method:

Place 250 ml water in a bowl and add the gelatine.
Heat the sugar and 350 ml water in a saucepan over a low heat until the sugar has dissolved.
Stir in the gelatine, bring to the boil and simmer for 20 minutes.
Add the cream of tartar and mix thoroughly.
Divide the mixture between three bowls.
Make each one a diffeent colour and flavour with peppermint essence or different fruit flavours.
Pour one lot into a large loaf tin to make the first layer and refrigerate until just set.
Pour in the next layer and allow to set, and repeat to make the last layer.
If the mixture sets before being added to the loaf tin, heat it gently in the microwave before adding to the tin.
Allow to set overnight.
Lift out of the tin and cut into cubes with a knife dipped in hot water.
Roll the minty jujubes in sugar to coat.
