  • 170
    ml
    white vinegar
  • 50
    g
    very finely chopped fresh mint
  • 30
    ml
    castor sugar (or more)
  • 60
    ml
    boiling water
  • salt and pepper
 

Method

 
1. Pour the vinegar into a bowl with the mint. Dissolve the sugar in the boiling water and add to the vinegar. Season and leave to mature for 1 hour before serving.
