Mini pitas with falafel, veggies and hummus

    400g tin chickpeas, rinsed, drained
  • 1
    Tbs
    flour
  • 1
    tsp
    cumin, ground
  • 5

    parsley, chopped
  • sea salt and black pepper
  • oil for frying
  • 3
    mini pita breads
  • 50
    g
    hummus
  • cucumber sticks, baby carrots, snap peas, grapes, mini rice cakes to serve

    ml
    soy yoghurt
  • 250
    ml
    fruit juice
 

Method

Place the chickpeas, flour, cumin, parsley and salt and pepper in a blender, blitz until smooth.
Roll mixture into small balls and fry until golden brown. Drain on paper towel and allow to cool.
Place a falafel and a dollop of hummus in three pita breads. (Falafels keep well in the fridge, so reserve the leftovers for the week's lunch boxes.) Place pitas in lunch box with remaining ingredients, separately packed.
