Mini health fruitcakes

    bran
  • 250
    ml
    brown sugar
  • 250
    ml
    dry fruitcake mix
  • 125
    ml
    glacé cherries
  • 250
    ml
    milk
  • 250
    ml
    self-raising flour
  • pinch salt
  • brandy for sprinkling on top
  • extra cherries and nuts
 

Method

30-35 min
 
Mix the bran, brown sugar, fruitcake mix and cherries with the milk and soak for 1 hour. Preheat oven to 150 ºC and spray a muffin tin with non-stick spray or butter lightly. Sift the self-raising flour and salt over the milk mixture and mix. Spoon the batter into the prepared muffin tin hollows and decorate with the remaining cherries and nuts. Bake for 30-35 minutes until done. Cool slightly and turn out. Sprinkle each fruitcake with a teaspoon of brandy and brush with some melted apricot jam. Serve lukewarm or cold. Makes 11 mini-fruitcakes.
