    cream or milk

    baby marrow, sliced

    fresh brown or fresh button mushrooms, sliced

    red sweet pepper, diced

    Gruyère, Parmesan, Cheddar or feta cheese, grated
 

Method

 
Spray 2 x 12 hollow muffin pans with non-stick cooking spray. Preheat oven to 160 ºC. Whisk eggs, salt, pepper, herbs and cream or milk in a mixing bowl. Mix vegetables and arrange a little of the cut vegetables in each muffin pan. Ladle egg mixture into each pan, level with rim. Sprinkle with cheese. Bake until just set, about 15 minutes.
