    round white bread rolls
  • 1
    onion, finely chopped
  • 1
    clove garlic, finely crushed
  • oil
  • 2
    tomatoes, skinned and diced
  • salt and black pepper to taste

    slices salami
  • 8
    fresh button mushrooms, sliced

    Cheddar cheese, diced
  • thyme and origanum

Cut the bread rolls in half and arrange on a baking sheet. Toast lightly under the oven grill. Sauté the onion and garlic in a little heated oil until soft. Add the tomatoes and simmer to form a purée. Season to taste with salt and black pepper. Spoon a little of the tomato purée on each bread roll and arrange the salami, mushrooms and Cheddar cheese on top. Sprinkle with a little thyme and origanum. Place the rolls under the grill once more and grill until the cheese has melted. Serve immediately. Makes 8 bunnizzas.
