Minestrone

Ingredients

    carrots
  • 2
    potatoes
  • 1
    parsnip
  • 2
    leeks
  • 2
    stalks celery
  • 1
    garlic clove, crushed
  • 30
    ml
    olive oil
  • 1.20
    Litres
    vegetable stock
  • 400
    g
    (1 can) butter beans
  • 3
    tomtoes, peeled and seeded
  • salt and ground black pepper
  • fresh parsley for garnishing
 

Method

30 minutes
 
Rinse and dice the vegetables.
Heat a little of the olive oil and sauté the carrots, potatoes and parsnips for a few minutes without browning.
Add the leeks, celery and garlic and sauté.
Add the stock, cover and simmer for 20 to 30 minutes.
Rinse the beans under cold water and add to the soup along with the tomatoes.
Simmer uncovered for about 5 minutes.
Season with salt and pepper to taste and garnish with parsley.
