    ml
    olive oil
  • 4
    leeks, sliced
  • 1
    clove garlic, crushed
  • 2
    carrots, peeled and diced
  • 4
    celery sticks, sliced
  • 3
    Litres
    chicken or vegetable stock
  • 1
    bay leaf
  • 10
    ml
    lemon zest, grated
  • 500
    g
    bite-sized mixed vegetables (preferably fresh)
  • 1
    x 400 g can sugar beans, drained
  • 30
    ml
    freshly chopped basil or parsley
  • 100
    g
    elbow macaroni
  • grated Parmesan, to serve
 

Method

 
Heat olive oil and sauté the leeks, garlic, carrots and celery for two minutes.
Add the chicken or vegetable stock, bay leaf and grated lemon zest.
Bring to the boil then reduce heat and simmer for 10 minutes.
Add the mixed vegetables, sugar beans, basil or parsley and elbow macaroni.
Cover and simmer for 10 to 15 minutes, until the pasta is tender.
Serve sprinkled with freshly grated Parmesan.
