Method

Fry the bacon in a pan until transparent and add the mushrooms and onion. Sauté until the mushrooms are cooked and the onion is soft. Season with origanum. Remove from the pan and cool. Blend all the mince ingredients except the dried breadcrumbs and season to taste with salt and pepper. Divide the mince mixture into 100 g portions and shape into round balls. Make a hollow in the centre of each ball and place the filling inside. Roll the balls in breadcrumbs and chill slightly. Heat sufficient oil in a pan and fry the mince parcels until browned. Serve hot or cold with piquant tomato sauce (see recipe). Makes 10 parcels.
