Ingredients (12)

5.00 apples — cooking
2.00 oranges
1.00 lemon
500.00 g mixed dried fruit
125.00 ml castor sugar
5.00 ml cinnamon — ground
3.00 ml mixed spice — ground
5.00 ml ginger — ground
3.00 ml nutmeg — whole, freshly grated
100.00 g butter
250.00 ml cider — dry
65.00 ml rum — or brandy

Method:

1. Peel, core and finely dice apples. Place in a large heavy-based pan.
2. Grate the peel of the oranges and lemon, taking care not to include any white pith. Squeeze the juice, add the peel, and stir in with remaining ingredients in the pan.
3. Slowly bring to the boil. Reduce heat and simmer gently. Cook uncovered for one hour, stirring occasionally.
4. Cook until mincemeat is thick and pulpy. The apple will break down and dried fruit will look plump and glossy. Place in sterilised jars, or cool and pack into plastic containers and freeze. Cover tightly and leave to mature for at least two weeks before use.
