750.00 g beef mince — lean
5.00 ml salt
black pepper — freshly ground
1.00 eggs
1.00 onion — finely chopped, fried
5.00 ml fresh herbs — mixed, chopped
150.00 g spinach
250.00 ml cheddar cheese — grated
8.00 bacon — rashers

Method:

Preheat the oven to 180ºC and spray a large baking sheet with non-stick spray.
Mix the mince, salt, pepper, egg, onion and herbs together and shape into a 26 x 40 cm rectangle on a sheet of wax paper.
Pour boiling water over the spinach, leave for 1 minute and drain. Refresh under cold water and pat dry.
Spread the spinach over the meat and season lightly with salt, pepper and nutmeg. if desired. Sprinkle the grated cheese over. Using the wax paper to assist you, roll up the meat lengthwise into a long roll. Place the meat roll on the baking sheet and cover with the bacon rashers.
Bake for 35-40 minutes until done. Remove from the oven and stand for a few minutes. Cut into fairly thick slices (the width of each bacon rasher) and serve with a flavoursome herb and tomato sauce and white or brown rice.
Serve 2 slices as a portion.
