Ingredients (18)

4.00 potatoes — peeled, boiled
2.00 ml salt
1.00 ml black pepper — freshly ground
1.00 fresh chillies — chopped
FILLING
30.00 ml oil
250.00 g beef mince — lean
1.00 fresh chillies — chopped
1.00 garlic — cloves, crushed
5.00 ml salt
2.00 ml turmeric — ground
5.00 ml cumin — ground
1.00 onion — medium, chopped
50.00 ml fresh coriander — chopped
30.00 ml lemon juice
30.00 ml flour
1.00 eggs — large, beaten
100.00 ml breadcrumbs — dried
0.00 oil — for frying

Method:

Mash the potatoes and add the salt, pepper and chilli.
Heat the oil in a large saucepan and fry the mince, stirring continuously to break up any lumps.
Add the chilli, garlic, salt, turmeric and cumin.
Cook for five minutes until dry.
Add the onion, coriander and lemon juice and cook for another minute.
Dust your hands with flour. Place a little mashed potato on the palm of your hand and place 5 ml of the mince filling in the centre.
Cover with a little more mash and roll closed.
Dip balls into egg and then into breadcrumbs.
Shake off any excess and shallow-fry until golden brown.
