Ingredients (19)

CRUST
750.00 ml rice — cooked
30.00 ml flour — cake
10.00 ml Baking powder
3.00 eggs — seperated
125.00 ml milk
10.00 ml flavour enhancer — Aromat
30.00 ml fresh parsley — chopped
MINCE FILLING
1.00 onion — chopped
2.00 garlic — cloves, crushed
200.00 g button mushrooms — or courgettes, sliced
oil
500.00 g beef mince
3.00 tomatoes — peeled and chopped
5.00 ml coriander
1.00 ml nutmeg — ground
5.00 ml fresh basil
sugar — pinch
salt and freshly ground black pepper — to taste
cheddar cheese — grated with fresh breadcrumbs

Method:

Preheat the oven to 180 ºC (350 ºF). Grease an ovenproof dish.
Mix the rice with the cake flour and baking powder. Beat the egg yolks and milk lightly and add to the rice mixture. Season with flavour enhancer and parsley. Beat the egg whites till stiff and fold into the rice mixture. Press the mixture against the sides and base of the dish.
Sauté the onion and garlic with the mushrooms or courgettes in a little oil till soft. Add the mince and fry till cooked but not brown. Add the tomatoes and simmer till the tomatoes are soft. Season with all the seasonings. Turn into the prepared crust and sprinkle with the Cheddar cheese and breadcrumbs. Bake for about 30 minutes till the crust is firm.
Serve with a salad.
Serves 4-6.
