Mince bake

    milk

    flavour enhancer such as Aromat

    parsley, chopped
  • MINCE FILLING
  • 1
    onion, chopped
  • 2
    cloves garlic, crushed
  • 200
    g
    fresh button mushrooms or courgettes, sliced (optional)
  • oil
  • 500
    g
    mince
  • 3
    tomatoes, skinned and chopped
  • 5
    ml
    coriander
  • 1
    ml
    nutmeg
  • 5
    ml
    basil
  • pinch sugar
  • salt and black pepper to taste
  • Cheddar cheese and fresh white breadcrumbs for sprinkling on top
 

Method

+/- 30 min
 
Preheat the oven to 180 ºC (350 ºF). Grease an ovenproof dish. Mix the rice with the cake flour and baking powder. Beat the egg yolks and milk lightly and add to the rice mixture. Season with flavour enhancer and parsley. Beat the egg whites till stiff and fold into the rice mixture. Press the mixture against the sides and base of the dish. Sauté the onion and garlic with the mushrooms or courgettes in a little oil till soft. Add the mince and fry till cooked but not brown. Add the tomatoes and simmer till the tomatoes are soft. Season with all the seasonings. Turn into the prepared crust and sprinkle with the Cheddar cheese and breadcrumbs. Bake for about 30 minutes till the crust is firm. Serve with a salad. Serves 4-6.
