Mince and sweetcorn pie

    cream-style sweetcorn
 

Method

 
Blend all the ingredients for the filling in a large microwaveproof dish. Microwave for 7 minutes, uncovered, on 100 per cent power. Stir well every 2 minutes. Turn the mixture into a round 24 x 5 cm microwaveproof dish. Blend all the ingredients for the crust, except the sweetcorn. Beat well and add the sweetcorn. Mix well. Pour the sweetcorn mixture over the filling. Place the dish on an upturned saucer in the microwave oven. Microwave for 25 minutes, uncovered on 70 per cent power until the crust is done. Serve hot with a green salad.
