1.00 aubergine — large
30.00 ml oil
1.00 onion — large, chopped
2.00 garlic — cloves, crushed
500.00 g beef mince — lean
410.00 g tomatoes — coarsely chopped
30.00 ml tomato paste
10.00 ml dried oregano
5.00 ml dried basil
5.00 ml salt
1.00 ml freshly ground black pepper
5.00 ml brown sugar
100.00 ml oil
200.00 g mozzarella cheese — grated
parmesan cheese — grated

Method:

Preheat the oven to 180 ºC. Slice the brinjal into 1 cm thick slices, sprinkle with salt and leave in a colander for 15 minutes. Meanwhile heat the oil and fry the onion and garlic until tender and fragrant, Add the mince and fry until it just begins to brown. Add the tomatoes, tomato paste, herbs, seasoning and sugar, and simmer slowly until slightly thicker. Rinse the brinjal slices well and pat dry with paper towelling. Brush with the oil and arrange on a baking sheet. Oven-roast the brinjal until pale brown on both sides and tender. Arrange a layer of brinjal slices in a medium-sized ovenproof dish. Sprinkle with a little of the grated cheese and spoon a layer of meat on top. Repeat until all the ingredients have been used. Sprinkle the Parmesan cheese on top and bake for about 30 minutes until warmed through.
